Pricing Transparency

In order to stay true to myself and remain in operation, I have decided I need to change the pricing significantly. There are several reasons listed below. I am not into glutton pricing or interested in milking people’s pockets to line my own pockets. 

For everything I purchase at one price, I do not charge more than 6 times the price. The pricing will cover the cost I paid, plus consideration to buy it back twice, cost to pay myself and the last cost to cover paying any kitchen help, taxes and other ingredients. 

Fried chicken will be significantly higher because of the process.

Keep in mind this is a small home kitchen. 

  1. As a gluttonous Jamaican/American – large portions are very much true to how we are. I do not like skimpy plates and I don’t think the people that patronize my services should either. So plates will be larger so you get more bang for your buck.

  2. I’ve always hated the half wing concept. Food is expensive but a half wing posing as a piece of chicken is wild work. Whole wings from here on out.

  3. When it comes to fried chicken in particular, it is highly expensive and labor intensive to prepare. The oil is expensive and to decrease the exposure to any carcinogens, I do not want to use oil to fry no more than 3-5x depending on how the oil looks. That’s a lot of discarded oil

  4. Not that I ever used cheap ingredients, but in order to make sure I do not skimp on ingredients because it may cut costs, I need to raise those prices. Better noodles for mac and cheese, high quality cheeses, quality flour, milk etc

  5. A lot of my ingredients are imported. (sure I can make my own seasoning complex) but until I find the time, I have to use the blends I am familiar with to give you that same great taste. So, whether I fly to NYC and bring it back in my suitcase. Or I order it online and pay a premium, I want you to have the best.
